More vital kitchen equipment

Another familiar and well-used piece of equipment in my kitchen (well, actually in the home office space just off the kitchen) in an Excalibur dehydrator.  We’ve had it for probably 25 years, and it continues to serve us well.  In it I make yogurt from fresh farm milk and dry a lot of produce from the garden–onions, garlic, peppers, corn, green beans, summer squash, peaches, apricots, cherries, apples, morel mushrooms in the spring.  There’s a real cornucopia coming out of that faithful piece of equipment!

Today I have a load of apples in to dry.  They don’t take long at all to get ready–core, slice to about 1/4″, then dry just to “leathery.”  I always put my dried fruits in the large bowl after I take them off the trays, letting them cure for a few days, distributing the little moisture that remains among the slices.  After that they store beautifully in gallon glass jars on the pantry shelves.  Yummy!
